Diospyros kaki, commonly known as the Asian persimmon, Japanese persimmon, or simply kaki, is a small to medium-sized deciduous fruit tree prized for its lush foliage, ornamental appeal, and richly flavored autumn fruits. Typically growing 4–12 meters tall, it develops a rounded, spreading crown with a sturdy trunk and smooth to slightly fissured gray-brown bark that becomes more textured with age. The tree’s leaves are broad, glossy, and elliptic, emerging a fresh light green in spring before deepening into a rich, dark green through summer and finally transitioning to brilliant shades of yellow, orange, or crimson in fall—often rivaling maples in seasonal color. In late spring to early summer, inconspicuous but attractive pale yellow to cream-colored flowers appear, with female flowers occurring singly and male flowers in small clusters, depending on cultivar. These give rise to the well-known persimmon fruits—rounded, oblate, or acorn-shaped depending on type—ripening from green to shades of bright orange or deep amber by late autumn. The flesh varies from firm and crisp in non-astringent cultivars like ‘Fuyu’ to soft, jelly-like sweetness in astringent types such as ‘Hachiya.’ Adaptable and resilient, Diospyros kaki thrives in full sun and well-drained soil, tolerating moderate drought once established but producing best with regular moisture. It is widely cultivated across East Asia, the Mediterranean, and warm temperate regions worldwide, valued not only for its delicious fruit but also for its decorative presence in the landscape, offering a unique combination of productivity, seasonal drama, and enduring cultural significance.
